BBQ Chicken Salad

I don’t know about you, but some days I’m in the mood for a big beast of a salad for dinner.  It’s light, it’s tasty, and it’s easy to put together.  My husband isn’t much of a “salad” guy, but if it’s got meat and BBQ sauce, he will most definitely eat it.  And it helps that I serve it with a big hunk of bread on the side. In a small bowl, whisk together BBQ sauce, garlic, mustard, lime juice, vinegar, black pepper, and olive oil. 
Preheat oven to 350 degrees. Place chicken breasts on a foil lined baking sheet. Rub with a small amount of olive oil and sprinkle with sea salt and pepper. Place in preheated oven and roast chicken for about 25 minutes, or until cooked through. Remove from oven and shred with 2 forks. Read more here:
